  • 275 g Plain Chocolate

  • 275 g unsalted butter

  • 85 g pecan nuts, chopped

  • 85 g milk chocolate, large chunks

  • 85 g white chocolate, large chunks

  • 175 g plain flour

  • 1 tsp baking powder

  • 4 large eggs, beaten

  • 1 tsp vanilla essence

  • 325 g caster sugar


  • Pre-heat oven to 170c / Gas 3.
  • Line a 30 x 20 x 3.5cm tin greased and lined with baking paper.
  • Put plain chocolate and butter in a bowl. Place over a bowl of water on hob and allow to melt.
  • Sieve the flour and baking powder in a bowl and set aside.
  • Remove melted chocolate from heat and add sugar. Eggs and vanilla essence. Fold in flour, nut and other chocolate.
  • Pour into cake tin and bae for 20-25 mins (Louise says more like 40).
  • Top should be firm and inside soft. Cool in tin.
