The Art of Red Sauce

This is a very simple recipe. Really only 3 ingredients. But with most Italian dishes, only few ingredients but needs to be done very well.

Good quality pasta is needed. Low quality pasta is bad as it becomes soft too quickly. Even after you take pasta off the heat it will continue to cook, and get softer. Your last bite of pasta needs to still be good texture. Good pasta holds its durability. Bad pasta even if taken off the heat at the perfect time, will be mush by the last bite.

Some people like to keep a cup of pasta water to add later.. I don’t.. and Italians don’t either.
