Ingredients

  • 3 melanzane

  • Made tomato sugo

  • Mozzarella (cubed), parmesan, basil

Directions

  • Chop melanzane, sprinkle with salt, leave 30 mins, rinse and squeeze dry
    (this is optional, but can avoid bitterness of melanzane)
  • Fry melanzane, drain on kitchen paper
  • Boil penne or pasta corta until very ‘al dente’ (un bollo!)
  • Drain and add sugo, melanzane, mozzarella, parmesan, basil
  • Put into baking dish, add more sugo is necessary
  • Parmesan on top
  • Bake one hour
