Ingredients

  • Roll of Beef Topside, Brisket or similar

  • 8 onions

  • 2 carrots

  • 2 celery

  • 2 Garlic

  • white wine

  • Stock Cube

  • Salt

Directions

  • Brown meat in heavy saucepan
  • Remove and add chopped onions, brown
  • Add meat, chopped carrots, celery and garlic
  • Add half cup white wine, cook little till reduced
  • Then add beef stock cube (optional) with enough water to almost cover meat
  • Simmer for about 2 hours
  • Serve sauce with pasta and parmesan (and meat if desired) or serve meat sliced with salsa verde
  • Sauce also tasty with boiled rice
